If you’re looking to add more whole grains to your diet, think outside the sandwich and add a brightly flavored quinoa salad to your lunch box. A hit with grown ups and kids alike, Quinoa Tabbouleh is a high protein, gluten free take the classic Middle Eastern salad normally made with bulgar. Served with Way Better Snacks Pinch of Sea Salt Pita-ahh Chips, hummus and your favorite fruits and veggies, Quinoa Tabbouleh makes a lunch to look forward to!

You can cook quinoa straight from the package, but you know here at Way Better Snack we are passionate about the health benefits of spouting. To spout the quinoa for this dish, plan to start the process a day or two before cooking.


  • 1 1/4 cup water
  • 1 cup quinoa, rinsed very well (we recommend following the sprouted method, above)
  • 1/2 teaspoon salt, plus more to taste
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon ground black pepper, or to taste
  • 1 large English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 2/3 cup minced flat-leaf Italian parsley
  • 1/2 cup minced fresh mint, or more parsley
  • 2 medium green onions, very thinly sliced


  1. In a medium saucepan mix water, quinoa, and salt.
  2. Bring mixture to a boil over high heat.
  3. Reduce heat to medium-low heat, cover & simmer quinoa until cooked through, @ 10 min.
  4. Remove from heat and let stand, covered, for 5 minutes.
  5. Fluff with a fork.
  6. Spread quinoa out on a rimmed baking pan and set aside.
  7. Allow quinoa to cool to room temperature.
  8. While quinoa is cooking, whisk olive oil, lemon juice, garlic, and black pepper in a small bowl.
  9. When quinoa is cooled to room temperature, scoop it into a large bowl.
  10. Add cucumber, tomatoes, parsley, mint and green onions to bowl.
  11. Whisk olive oil mixture again, then pour over ingredients.
  12. Mix ingredients well until everything is well blended.
  13. Taste and add more salt and pepper, if desired.
  14. Cover and place in refrigerator to chill until ready to serve.
