Very Veggie Gazpacho

Grab those extra tomatoes from your garden and make this nutritious soup. Being a cold soup, the raw veggies will maintain all their nutrients while they burst with flavor from the added spices.


  • 1 qt. R.W. Knudsen® Family Spicy Very Veggie Juice
  • 1 medium seedless cucumber
  • 3 stalks celery
  • 3 green onions
  • 3 medium tomatoes
  • 1 cup loosely packed cilantro plus 6 sprigs
  • 2 Tbsp. lemon juice
  • 1 large clove garlic, chopped
  • 1 tsp. jalapeno, chopped (optional)
  • Salt and pepper, to taste
  • 1 avocado, as garnish


  1. Finely chop the cucumber, celery, onions, tomatoes and 1 cup cilantro; combine in a large bowl.
  2. Place half of the vegetables, the garlic and half of the Spicy Very Veggie Juice to the bowl of a food processor. Add Jalapeno if desired.
  3. Process until smooth.
  4. Return the mixture back to the bowl with the remaining chopped vegetables, and add remaining Spicy Very Veggie, lemon juice, salt and pepper.
  5. Chill well before serving.
  6. To serve, pour gazpacho into soup bowls and garnish with sliced avocado and sprigs of cilantro.
