Thai Lime Rice Stuffed Peppers

This Thai Lime Stuffed Peppers will impress your dinner companions with its colorful presentation and exotic flavor. Best of all, it’s an easy meal to prepare ahead of time so that you can quickly bake it to perfection and serve this hearty dish nice and hot, any time of the week.


  • 1 package of Tasty Bite Thai Lime Rice
  • 1 cup broccoli florets
  • 1/2 cup diced onion
  • 1/2 diced red bell pepper
  • 1/2 cup steamed peas
  • 4 chopped trumpet mushrooms
  • 4 bell peppers
  • 1 cup of Parmesan cheese


  1. Slice off top of peppers, clean out seeds and place in a lined baking dish
  2. In a sauté pan over medium heat, add olive oil, heat, and then add onions, bell peppers, and sauté for 3-5 minutes.
  3. Add mushrooms, cook for additional 3-5 minutes, and then add peas, broccoli and rice.
  4. Preheat oven to 350 degrees F.
  5. Remove rice mixture from heat and toss in ¾ cup Parmesan cheese
  6. Fill the 4 peppers with the rice mixture
  7. Place in baking dish and top with remaining cheese
  8. Bake in oven for 20 minutes
  9. Serve immediately
