Sweet Potato 7 Layer Dip

Description

There are certain things that make a party, and seven layer sweet potato dip by Imagine® is one of them. A new twist on a traditional classic, this dip adds the flavor and nutritional value of the sweet potato to the culinary fiesta. And the best part, you can make this dish well in advance to the start of your bash because it tastes best at room temperature. Party on!

Ingredients

  • 2 15 oz. cans Westbrae Natural® Organic Black Beans, drained and rinsed
  • 1 C. salsa
  • 1 C. Imagine® Organic Sweet Potato Soup
  • 1 tbsp. ground Spectrum® ground flax seed
  • 1 ½ tbsp. garlic powder
  • 2 medium sized sweet potatoes, scrubbed and chopped
  • 1 C. nutritional yeast flakes
  • 1 ½ tsp. Hain Pure Foods® Sea Salt
  • 1 tsp. turmeric
  • 1 tsp. chili powder
  • 3 tsp. paprika
  • 2 C. Arrowhead Mills® Organic Quinoa, cooked
  • 2 tsp. taco seasoning
  • 2 ripe avocados, peeled, pitted and chopped
  • 1 green onion, thinly sliced
  • 1 tbsp. lime juice
  • 3 – 4 leaves of cilantro, chopped (or 2 tsp. dried cilantro)
  • 2 C. sliced black olives
  • 2 C. fresh tomatoes, chopped
  • 1 C. vegan cheddar cheese, shredded
  • Garden of Eatin’® Sweet Potato Corn Tortilla Chips

Directions

  1. Prepare the Black Bean Dip by combing black beans, salsa, ground flax seed, and 1 tsp garlic in a food processor and pulse until smooth.
  2. Spread across the bottom of a deep-dished serving plate.
  3. Place the chopped sweet potatoes in a microwave-safe bowl and pour enough water until just covered. Microwave the potatoes for 4 – 5 minutes and then allow them to sit until softened. Use a fork to test the potatoes to ensure they’re a tender.
  4. When the potatoes are ready and cooled, carefully drain the excess fluid, and pour the softened sweet potatoes into a food processor bowl.
  5. Add the nutritional yeast flakes, sweet potato soup, 1 tsp sea salt, turmeric, chili powder, and 1 tsp. paprika. Pulse until smooth.
  6. Spoon the Sweet Potato Spread over the black bean mixture on the serving plate, reserving 1 tablespoon.
  7. Prepare the Quinoa Taco Filling by combining cooked quinoa, taco seasoning and 2 teaspoons paprika in a medium bowl. You can substitute smoked paprika if you like here for a smokier taste. Stir until combined.
  8. Add one tablespoon of the sweet potato mixture (reserved from step #3) to the quinoa mixture and stir until combined (this helps the quinoa stay together better for dipping purposes).
  9. Then spread the prepared Quinoa Taco Filling over the Sweet Potato layer.
  10. Prepare the Simple and Fresh Guacamole by placing the chopped avocados in a bowl and then adding the sliced green onion, lime juice, half tsp garlic powder, cilantro, and half teaspoon of sea salt. Stir until well combined.
  11. You can continue to stir until the guacamole is relatively smooth or keep it kind of chunky, whatever your preference is.
  12. Drop spoonfuls of the guacamole along the outside edge over the quinoa layer and then work your way inward, using the back of your spoon to spread it evenly across the top.
  13. Top the dip with chopped black olives, diced tomatoes, and vegan shredded cheese.
  14. Cover and refrigerate until ready to serve.

Note: You can easily make this dip the day ahead of your party – the flavors grow tastier over time. This dip goes nicely with the Garden of Eatin’® Sweet Potato Corn Tortilla Chips.
