Southern fried chicken

This is so quick to prepare, will take less time than getting in the car and picking up a take away...and be better for you! Adding herbs and spices to a ready-bought tempura mix (one that includes maize meal in it is good) makes this a synch, and you can add as much or as little as you like.


  • 8 chicken drumsticks, with or without skin
  • 1 teaspoon mild chilli seasoning
  • 1 teaspoon paprika pepper
  • 1 teaspoon garlic powder
  • 1-2 teaspoons mixed Italian herbs
  • 9oz packet tempura batter mix (supermarket own brand)
  • vegetable oil, for frying
  • LoSalt and freshly ground black pepper to taste


  1. Put the chicken into a large saucepan, cover with water (or chicken stock) and bring up to a simmer.
  2. Cover and simmer for 20 minutes or until the chicken is cooked through.
  3. Remove the chicken from the pan, and place on a rack to cool for 15 minutes.
  4. Meanwhile preheat a deep-fat fryer to 160°c.
  5. Mix the spices and herbs into the dry tempura batter with a pinch of LoSalt and pepper to taste, then add the liquid according to manufacturer's instructions and mix to a batter.
  6. Dip chicken drumsticks one at a time into the batter to coat, then gently drop into the hot oil, and fry in two batches until golden, crisp and piping hot - about 1. 2 minutes.
  7. Remove from the oil and transfer to a paper towel-lined plate to drain.
  8. Serve immediately with grilled or barbecued sweet corn and relishes for dipping.
