Roast Beef Panini with Shoestring Onions

A yummy way to make use of leftovers, this crispy Panini will become a family favorite.


  • 2 Slices Rudi’s Organic Bakery® Country Morning White bread
  • 1 TBSP butter
  • 2 slices roast beef
  • 2 slices cheese
  • 1 peeled and sliced onion
  • 2 ½ cups flour
  • 1 TBSP garlic salt
  • 1 ½ cups buttermilk
  • 1 TBSP salt
  • 1 teaspoon pepper
  • ¼ cup Spectrum Organic Canola Oil


Panini Preparation

  1. Heat butter in pan or griddle over low heat
  2. Assemble the sandwich, layering the cheese and roast beef to your liking
  3. Grill on both sides until the cheese has melted and the bread is a golden brown color

Shoestring onion Preparation

  1. Heat oil in a pot (deeper is better) to about 350°
  2. In a large bowl, mix together flour, garlic salt, salt, and pepper. Set aside
  3. In another bowl, combine sliced onions and buttermilk
  4. Dredge a small batch of the onions through the dry seasoning mix and gently place them in the pot.
  5. Fry for 2-3 minutes or until golden brown
  6. Place on a paper towel and repeat until all the onions are fried
  7. Serve with warm roast beef Panini
