You never considered pudding for breakfast but here is why you should: 1) you can make it the night before 2) nourishing chia seeds keep you fuller longer and 3) you can easily add whatever fruit topping you have on hand.

  • ¾ cup chia seeds
  • 2 cups Hemp Vanilla Non-Dairy Beverage
  • Dash of vanilla extract
  • Fresh berries for topping (we used strawberries and blueberries)

  1. Combine the first three ingredients in a bowl, cover and refrigerate overnight.
  2. Layer chia seed pudding and fresh berries in small glass jars and serve immediately.

Recipe notes: Chia seed pudding can be made up to 3 days in advance. To shake up the flavor on this one, substitute a nut beverage (like hazelnut or almond) or by using other fresh berries, like raspberries, marionberries or blackberries.
