Oatmeal Pancakes

These light, fluffy and delicious pancakes are a great take on the traditional pancake, and will become a fast favorite in any household. The oatmeal adds a hearty texture and oat flavor which works beautifully with the fruit flavors. They are super easy to make and wonderfully healthy too. Add your favorite maple syrup and enjoy.


  • 1 cup Silk soymilk, almondmilk, coconutmilk or Almond Coconut Blend
  • 1 1/2 cups oatmeal, divided (quick or old-fashioned)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 eggs, beaten
  • 1 container Silk Vanilla Soy Fruity & Creamy
  • 1/2 cup fresh or frozen blueberries, raspberries or sliced bananas


  1. Bring Silk to a simmer in a saucepan over medium heat.
  2. Remove from heat and add 3/4 cup oatmeal.
  3. Stir and let sit for 10 minutes.
  4. Meanwhile, grind remaining 3/4 cup oats in a blender or processor until fine.
  5. Combine ground oats, baking powder and cinnamon in a bowl.
  6. Add Silk mixture, eggs and Fruity & Creamy, mixing to combine. NOTE: If batter is too thick to pour, thin it out with additional Silk.
  7. Fold in fruit.
  8. Pour by 1/4 cup onto hot griddle. Cook until nicely browned on each side.
  9. Serve with maple syrup, fresh fruit or additional Fruity & Creamy.
