Kale, Apple and Walnut Salad with Walnut Oil Dressing

Description

This flavorful, Fair-Trade vinaigrette by Emile Noël goes great on any salad. But don’t hold back on the power of this vitamin-rich dressing. Try it as a dip for bread as an alternative to butter, or as a marinade for your favorite meats or fish. Enjoy!

Ingredients

Salad Ingredients

  • 4 kale leaves (chopped and massaged with 2 tablespoons of lemon juice)
  • 1 apple (diced)
  • 1 celery stalk (chopped)
  • walnuts (a handful, roughly chopped)

Dressing Ingredients

  • 1 tablespoon Emile Noel Mild Olive Oil
  • 1 tablespoon Emile Noel Organic Walnut Oil
  • 1/2 teaspoon balsamic vinegar
  • salt (to taste)
  • black pepper (fresh ground)
  • red pepper flakes (a pinch to taste)

Directions

  1. Massage the kale with lemon juice.
  2. Add apple and celery.
  3. Mix dressing and toss with salad.
  4. Top with walnuts and serve.
