Grilled Salmon with Fennel and Sesame Seeds

  • whole side of fresh salmon with skin on, bones removed
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh fennel leaves, coarsely chopped
  • 2 teaspoons white sesame seeds
  • 2 teaspoons black sesame seeds
  • salt and pepper to taste
  • Spectrum Naturals® High Heat Canola Spray Oil


  1. Prepare the barbecue.
  2. Make sure you have a good hot fire.
  3. Meanwhile, combine the garlic and the fennel leaves.
  4. Marinate the salmon in this dry mixture until your fire is ready, at least 30 minutes.
  5. Spray the fish liberally with the Spectrum Naturals® High Heat Canola Spray Oil, first on the flesh side and then on the skin side.
  6. To begin cooking, place the whole side of salmon skin side DOWN on the grill.
  7. Allow to cook until the fish is cooked about 40 percent up from the skin, about 5 minutes.
  8. Using the pancake turners together, carefully flip the whole side over onto the flesh side in one quick motion.
  9. Allow to cook another 4 or 5 minutes until the color of the fish is opaque and its flesh is firm to the touch.
  10. Remove from the fire, season with salt and pepper immediately and allow to rest at least 5 minutes, skin side down.
  11. Sprinkle with the sesame seeds and serve.
