Gluten-Free Fluffy Pancakes

Description

Try these fluffy pancakes that are delicious and gluten-free! It uses a main ingredient of almond meal and adds in some DREAM™ non-dairy beverage for some extra flavor. The whole family will love them!

Ingredients

  • 3 cups almond meal
  • 1 tablespoon ground flaxseed
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 3 large eggs
  • 3/4 cup of your favorite DREAM™ non-dairy beverage
  • 2 tablespoons extra-light olive oil or butter, melted

Directions

  1. Whisk dry ingredients in one bowl, wet in the other.
  2. Slowly add dry ingredients to wet.
  3. Add more DREAM™ as needed to get the consistency you prefer.
  4. Ladle ¼ cup batter onto lightly oiled skillet and cook over medium heat till bubbles form and edges crisp, then flip and cook until golden. Serve immediately with your favorite topping.
