In a saucepan, add all ingredients and stir to combine. Over low-medium heat, begin to cook down the fig mixture until it thickens. Stir often, this will take about fifteen to thirty minutes, it really depends on your figs.
Once you have a thick, jam like mix, remove from heat and place in a glass or ceramic container to let cool. The compote will continue to thicken as it cools.
You can serve your compote warm or cold and with a whole bunch of stuff. Try vegan nut cheese, homemade bread, or even add into smoothies and on top of bowls.
NOTE: You can use fresh figs for this, but because of the water content, you’ll end up cooking them down for longer.
