Chocolate Hemp Waffles with Strawberry Compote

This Chocolate Waffle recipe from Dr. Bronners’s kitchen will have you smiling ear to ear. What could be better than a delicious waffle recipe that is really good for you? The spelt flour and hemp protein powder bring a lot of nutritional benefits to this traditional breakfast treat. The coconut oil, vanilla, cocoa and strawberry compote bring out the sweet flavors that will have you coming back to this recipe time and time again. Add a little maple syrup or some whipped cream and enjoy!

Ingredients

Waffles

  • 1 1/3 cup of spelt flour
  • 1/3 cup of hemp flour or hemp protein powder
  • 1/3 cup of cocoa
  • ¼ cup of cornstarch
  • 1 tablespoon baking powder
  • ¼ teaspoon of salt
  • 2 tablespoons of sugar
  • 2 eggs beaten
  • 1 ½ cups warm milk
  • 1/3 cup of melted coconut oil
  • 1 teaspoon vanilla
  • Melted coconut oil for greasing
  • Hemp nuts (optional)
  • Whipping cream (optional)

Strawberry Compote

  • 2 cups of fresh or frozen strawberries
  • ½ cup of white sugar
  • 1 teaspoon of orange zest
  • ¼ cup of orange juice
  • ½ cup of maple syrup

Directions

  1. In a medium sauce pan bring the strawberries, sugar, orange zest, orange juice and maple syrup to a boil.
  2. Reduce heat to medium low and simmer until it’s a thick consistency. Set aside.
  3. In a large bowl add spelt flour, hemp flour, cocoa, cornstarch, baking powder, salt and sugar. Set aside.
  4. In a medium bowl add eggs and beat, add milk, coconut oil and vanilla and beat until well mixed.
  5. Add wet ingredients to dry and whisk until just blended.
  6. Preheat waffle maker to medium heat.
  7. Grease with melted coconut oil using a basting brush.
  8. Pour just enough batter to cover each waffle insert.
  9. Cook for about 3 minutes or until crisp.
  10. Serve warm with strawberry compote and garnish with hemp nuts and whipping cream.
