Chocolate and Ginger Cookies

This delicious cookie pairs the unexpected, in combining ginger and chocolate. This sweet cookie with a little spice is one that everyone will enjoy. The recipe takes a total of 25 minutes start to finish. This traditional cookie, with a little spin, will not disappoint.


  • 2 cups plain flour
  • 1 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 8 tbsp unsalted butter, softened
  • 2/3 cups golden caster sugar
  • 1 egg
  • 2 tbsps milk
  • 1/2 tsp vanilla extract
  • 1/4 cup Mackays Ginger Preserve


  1. Whisk together the flour, sugar, baking powder, ginger and salt.
  2. With a paddle attachment on a stand mixer, beat the butter on a medium speed until light and creamy.
  3. Add the egg and beat for 2 more minutes.
  4. Mix in the milk and vanilla in until just combined.
  5. On a low speed, beat in the ginger preserve before finally adding all of the dry ingredients and mixing only until they are incorporated.
  6. Fold in some chocolate chips and left the dough to chill on a lined baking tray in the fridge for a few hours.
  7. Bake at 374F for 12 - 15 minutes.
