Bucks Fizz Muffins

Fresh baked muffins will be the perfect way to get everyone out of bed! Mackays Orange Marmalade with Champagne gives these muffins a super moist texture with a mild orange flavor.


  • 8oz Plain Flour
  • 3oz Porridge Oats
  • 2 tsp Baking Powder
  • 1/2 tsp Bicarb of Soda
  • 1/2 tsp Salt
  • 3oz Caster Sugar
  • 1 Egg
  • 1 cup Milk
  • 12oz Jar Mackays Orange Marmalade with Champagne
  • 6 tsp Vegetable Oil


  • Approx 2 tsp each Porridge Oats & Demerara Sugar


  1. Sift together all dry ingredients in one bowl.
  2. In another combine all wet ingredients, including the marmalade.
  3. Pour wet into dry and mix until just combined.
  4. Spoon into muffin cases to around ¾ full and sprinkle the tops with porridge oats and demerara sugar.
  5. Bake at 392F for 25 minutes until tops are lightly browned.
