Alpine Muffins

Description

These muffins are a synthesis of various recipes I have used in the past and my family adores them. They are so simple to heat up in the morning and so nutritious.

Ingredients

  • 1 ½ cups Familia Original or No Sugar Müesli
  • 1 cups flour
  • ½ cup brown sugar
  • 1 ¼ tsp. baking soda
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ tsp. salt
  • 2 cups buttermilk
  • 1 egg, beaten
  • 3 tbsp. vegetable oil
  • 2 tbsp. maple syrup
  • ½ cup raisins

Directions

  1. Combine all dry ingredients in a large bowl; make a “well” in the center.
  2. Stir buttermilk, egg, oil, and syrup together; add all at once to dry ingredients, stirring just until moistened.
  3. Stir in raisins. Batter will be lumpy, do not overmix.
  4. Spoon into greased muffin cups.
  5. Bake in preheated 350° oven 20 to 25 minutes.
  6. Remove from pans immediately.
