10 Minute Tomato Sauce & Vegetarian Meatballs

In honor of National Garlic Day I want to share my quick and delicious tomato and vegetarian meatball recipe. It is a go to in our household at the end of a busy day. Garlic is an essential ingredient in the sauce and the meatballs, which is very fitting this day and really every day. I love using garlic in most of my recipes because it is a nutritional powerhouse that packs a wallop of flavor too. Low in calories and very rich in Vitamin C, Vitamin B6 and Manganese—you can count on garlic to boost your immune system. 

10 Minute Tomato Sauce

Ingredients:

  • 1 can of diced tomatoes
  • 1 can of tomato paste
  • 2 cloves garlic
  • Pinch of salt (optional)
  • ½ white onion chopped
  • ⅓ cup olive oil
  • ¼ cup parmesan cheese
  • 10 chopped basil leaves
  • 1 dollop grass fed butter

Directions:

Heat olive oil over medium heat in a skillet. Sautée pressed cloves of garlic and chopped onions until translucent. Add can of diced tomato and tomato paste, stir occasionally while the sauce comes together, add salt and reduce heat. In the meantime boil pasta of your liking. When pasta is finished strain and add to skillet. Reserve a ½ cup of starchy water from the boiled pasta and add to the pasta and tomato sauce. Add 1 dollop of butter, mix together well and plate. Sprinkle basil and cheese over pasta to taste.

Garlic Vegetarian Meatballs  

Ingredients:

  • 1 16 oz. package of seitan
  • ½ cup oats
  • ½ cup whole wheat bread crumbs
  • 3 cloves of garlic
  • ¼ onions chopped
  • 5 mushrooms diced
  • ¼ cup fresh basil chopped
  • ¼ cup fresh parsley chopped
  • 1 tsp. soy sauce
  • 3 Tbsp. olive oil
  • 1 egg      

Directions:

Blend seitan and oats in food processor until combined. Transfer to bowl and stir in breadcrumbs, onions, mushrooms, herbs, olive oil, garlic, soy sauce and egg. Shape mixture into small balls. Fry in a sauté pan over medium heat until meatless meatballs are a golden brown.

Just add some garlic bread and a side salad and you will be set.
