The Perfect Gluten-Free Meal

A true Italian lives for pasta.  Need a dinner entrée?  Try pasta.  Missing something in your soup?  It’s pasta.  Looking for a lunch side? Pasta salad.  Breakfast?  How about a big bowl of leftover pasta?  Thus has been the way of life in my home for as long as I can remember.  Naturally, it can’t be hard to imagine the obstacle that came to mind when my home decided to go gluten-free.

Organic Quinoa Pasta

The first couple of months were the worst.  My stove and my sink constantly presented an endless slew of mushy, unsatisfying, pasta substitutes.  Whether it was spaghetti or elbow macaroni, I was convinced that the time had come to say “arrivederci” to my pasta-centered world.

Luckily, just before I hung up my pasta strainer for good, my friend recommended Living Now.  I could not believe my eyes when I cooked it and was rewarded with a steaming pot of pasta just like Mom used to make!  And when I tasted it, I had to double-check the box to make sure that I hadn’t mistakenly bought a box of traditional noodles.

Thanks to Living Now, my “pasta all day” diet is back in full swing, and my gluten-free meals have gone from soggy disappointments to plates full of “perfecto.”
