When I decided to become a vegetarian many years ago, feeding my family of five was the farthest thing from my mind. For me it was an easy decision, my diet was already very plant based. Taking the occasional chicken dish off the menu had little impact. Flash forward seven years and it has become a real chore to find meals that my three kids will also enjoy. We have our staples that we sort of rotate on the menu, but that can get a little boring.
