My favorite ice cream treat as a kid was the Chipwich™. To this day, I crave it when the warm weather rolls around. I was trying to eat less gluten this past winter and I decided that I would have to come up with a gluten free option that could stand up to my ice cream/cookie seasonal craving I was bound to have, from time to time, come summer. After some investigation and a couple of botched attempts, I have come up with a pretty great option. I was happy to find Lifeway’s Frozen Kefir. It was creamy and delicious, but tangy enough to stand up to the sweetness of the cookie. What made it even better was that it was high in protein and calcium and made from all natural ingredients. You've got to love that.
Below is the quick and easy recipe. It is one I know you will enjoy.
2 Dr. Lucy’s Gluten Free Chocolate Chip Cookies (Feel free to bake your own gluten free cookies of choice)
2 scoops of Lifeway Frozen Kefir
⅓ c Enjoy Life Baking Chips
Place 2 scoops of the Lifeway frozen kefir in between the two cookies.
Place chocolate chips on a plate and roll the outer edges of the cookies on top of the chocolate chips until the edges are coated with chips.
Now take a big bite and say mmmm!
