Breakfast: Back to School Style

Motivating your pack in the morning can be hard, but getting up extra early to whip up a tasty breakfast for them is even harder. The best part about this recipe is that you can make it the night before then pop it into the oven in the morning. Horizon makes everything you need to make it, just add toast and some spices. 

If your family is crazy for cilantro or totally into tomatoes, you can add those too. Customize your mini quiches for the whole family.

Horizon Organic Mini Quiches


1-3/4 cup Horizon Organic Whole Milk plus DHA

4 whole eggs

2 egg whites

1/2 teaspoon salt

1/4 teaspoon fresh black pepper

1 or 2 dashes cayenne pepper

2 slices sandwich bread, toasted and chopped into small cubes

1/4 cup shredded Horizon Organic mozzarella cheese

2 tablespoons minced fresh herbs such as chives, dill or basil


Preheat oven to 375 degrees

Whisk milk, eggs, egg whites, salt, pepper and cayenne until thoroughly combined.


Lightly oil a muffin pan. Chop toast into cubes and divide evenly among the muffin cups. Pour egg mixture into the cups, filling each 3/4 full. Sprinkle with cheese and herbs.* Cover with foil and bake in preheated oven for 10 minutes. Remove foil and continue to bake an additional 10 minutes or until a toothpick inserted in the middle comes out with just a few crumbs. Mini quiches will be puffy at first, then deflate as they cool. Serve warm or at room temperature.

*Recipe can be prepared to this point, covered with foil and refrigerated overnight, then cooked fresh in the morning.
