I was out shopping at my local food store a few months back, hungry—never a good idea— when I spied a huge vegan chocolate chip cookie in their bakery section. They were wrapped individually and I was really hungry so I decided to try one. It was so ridiculously good. Too good really, because I went back the next day and bought two more. Vegan or not it was the best chocolate chip cookie I have ever tasted. It was then that I decided I needed to figure out the recipe so I could make these delicious cookies, whenever. After searching for a vegan chocolate chip cookies and trying out a few recipes, I think I’ve got it! Enjoy!
½ c coconut oil
¾ c brown sugar
1 tablespoon vanilla
¼ c almond milk
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon fine sea salt
1 cup of vegan dark chocolate chips
Preheat oven to 350º. Thoroughly blend the coconut oil (scoop in right from the jar, no need to melt down) and brown sugar. Then add the vanilla and the almond milk. In a separate bowl, combine all dry ingredients except for chocolate chips. Now combine the wet and dry ingredients and finally add the chocolate chips. Dough will be crumbly, this is ok. Roll into balls and place 1 inch apart on an ungreased cookie sheet or a baking sheet lined with parchment paper. The cookies will come out round but taste delicious and are kid approved in my house!
