5 No-Cook Meals Perfect for a Hot Summer!

As the temperature begins to rise my desire to be in the kitchen and turn on the stove to make our evening meal plummets. There is nothing that I look forward to less than rummaging through the cupboards after a long hot day out and about, with a chorus of three little voices asking, “What’s for dinner, mom?”  I don’t know what it is about the summer season, maybe the heat really does make me lose my appetite, but I know that most nights we are all happier if something light and easy is on the menu. Below I’ve listed my favorite, easy go to meals that make meal planning and preparation so much more enjoyable this time of year. 

Blender Gazpacho...this, quick and easy soup can be paired with a side salad. This cool, tasty soup will go down easy when the weather is hot and humid. 

Homemade Hummus Platter...All you need is a food processor and this meal is ready in 5 minutes or less. Make sure to add cucumbers, carrots, olives and pita for dipping. Feta and grape leaves are also wonderful additions to this quick summer meal.

Chilled Avocado Soup… This Soup is cool, creamy and delicious. This one I serve with a side of tortilla chips, salsa and bean dip...an easy, no cook Mexican Fiesta!

Tomato, Basil and Mozzarella Cheese on a Baguette...This sandwich is a favorite in our house. So quick and easy plus it’s perfect for this time of year when the tomatoes are so delicious.

Tuna Nicoise Sandwich on a Baguette…This sandwich is another quick and easy meal that you will love. If you have kids you may have to make them something else...my kids have yet to be persuaded to try. But if you like tuna, this is a quick, light summer option.

Remember to keep it simple and stay cool and your summer cooking will be a whole lot easier.
